Weekly Meal Plan - Pigs must be flying!

When it comes to meal planning, one thing is certain - I never get requests. I can't tell you how often I ask Jeff, "Anything you'd like for supper this week?" and I'm almost always met with the reply, "Ehh whatever, I'm up for anything." I'm only complaining a little, because at the end of the day I'll gladly trade in the relief their input would give for a family of non-picky eaters.

Welp, as I insinuated, the miraculous happened this weekend. I received to unsolicited requests - one from Jeff and one from Carson, so you better believe I'm gonna make them happen. Thanks guys!

1.) Spaghetti & Meat Sauce (Carson's request), Broccoli, Garlic Bread.

2.) Baccon-wrapped Venison Tenderloins (Jeff's request), Grilled Veggies.

3.) Alice Spring's Chicken (Outback Copycat), Peas & Carrots, Applesauce.

4.) Venison Cheesesteaks with peppers & onions, Grandma's Potato Salad (below).

Grandma's Potato Salad

8 medium potatoes
1 c celery, diced fine
1 carrot, grated
1 medium onion, diced very fine
3-4 hard boiled eggs, chopped
1 tsp salt

1 1/2 c mayonnaise
1/4 c vinegar
1/2 c sugar
2 tsp mustard
1/2 c milk

Cook potatoes in skins until tender. Peel potatoes while warm and dice. Add celery, carrot, onion, egg, and salt. To make the dressing, mix the first 4 ingredients well, adding the milk last. Pour over veggies and toss till everything is coated evenly. Serves 8-10.

P.S.- Grandpa was a potato farmer, so you can rest assured that Grandma's recipe is the best and will easily satisy all of your comfort food desires!
